Teaching

Ruth lectures in nutrition across many of the programmes in the Department of Health Care and Food including Human Nutrition & Dietetics, Food Science and Technology, Health Exercise and Nutrition, Health and Social Care and Complementary Therapies.  She also lectures in Health Promotion, Research Methods, New Product Development, Sensory Analysis and Sustainable Food Issues.

Research

Ruth's research interests lie in the area of the promotion of palatable, affordable, accessible sustainable diets and the link between oral and general health.  She collaborates in this research with colleagues at Cardiff University.
