Clam's Cakes - Case Study

Background

Clam’s Cakes, based in Blaenau Gwent, are an artisan bakery who supply ambient and frozen cakes to the food service market. All of their products including loaf cakes, tray bakes, muffins and macarons are hand made in small batches.

Clam’s stay on trend through a focus on creating innovative new products. In 2018, they were named Wales’s best craft bakery business in British Baker’s Baking Industry Awards and the company has also won a number of Great Taste Awards.

Clam’s have previously worked with ZERO2FIVE Food Industry Centre on internal audits, new product development, data logging and support with SALSA accreditation. So, when they needed support with an upcoming retailer audit and a supplier questionnaire they contacted the team for help.

ZERO2FIVE helped Clam’s complete a product specification questionnaire which was required to supply two new vegan cake products to an international food wholesaler that the company had not worked with before.

With support from a ZERO2FIVE technologist, Clam’s were able to provide the wholesaler with the necessary information about product ingredients and claims, packaging specifications and allergens.

ZERO2FIVE also assisted Clam’s through the audit process with a national supermarket chain to help them become a supplier to a local branch of the supermarket’s café. A pre-audit meeting with a technologist helped the company prepare their factory and post-audit they were mentored in putting the required actions into place, including updating their allergen risk assessment.

Without support from ZERO2FIVE, Clam’s Cakes wouldn’t have been able to secure the contract with the international food wholesaler.

Clam’s are also now in a position to take advantage of the vegan cake market, a space in which they hadn’t previously operated.
