Formerly a practising barrister of some renown, Mayo caught the pedagogic bug late 2002 when he joined the Cardiff School of Management to pursue his love of teaching law. In between being a science fiction fanatic and a Terry Pratchett enthusiast, by 2005 his love of teaching law combined with his love of the university turned into obsession resulting in a full time teaching career as a senior lecturer in law. To date he continues to be involved in the curriculum design of programmes as well as develop and teach numerous law modules at undergraduate and postgraduate levels.

Mayo is a proud member of the CSM Governance, Accountability and Social Justice research group and based on his brief experience as a neutral arbitrator over a decade ago in non-administered arbitration proceedings over timber extraction disputes in South East Asia as well as his background as a capital debt market risk analyst prior to commencing his legal education in the 90's, he continues to have a keen research interest on the operation of the bilateral investment treaties and the investment treaty arbitration system itself.

Between 2005 and 2011 Mayo served as the Year 3 tutor for BA (Hon) Business and Management Studies programme and as the Programme Director for BA (Hon) International Business Administration. 

Between 2009 and 2011, Mayo was also responsible for coordinating international student recruitment, conducting partnerships risk audit and due diligence as well as student support provision within the School including the CSM International Summer Programme and acted as the School liaison for BUSINET.

Since 2012 Mayo has been serving as the Programme Director for LLM International Business programme. He teaches extensively on the programme and supervises theses.

In addition, over the last decade Mayo has been the Chairman of the Board of Directors of Advocacy Matters (Wales), the largest independent advocacy charitable trust in Wales advocating for the learning disabled and those suffering from mental health illnesses.

Many years ago he was thrown out of the robing rooms of the Royal Court of Justice for frantically running around and shouting 'Bob', his pet guinea pig which sadly was never found…​​
