​Karen is a lecturer in Nutrition and Sports Nutrition at Cardiff Metropolitan School of Sport and Health Sciences. She has worked as an Associate Tutor for Cardiff Met since 2013 and joined as a Lecturer in January 2022. Karen's background includes working extensively as a registered dietitian within healthcare and industry and as a Sport and Exercise Nutritionist (SENr) at an elite level in sport. She served on the British Olympic Association (BOA) Sports Nutrition Advisory Group and was involved in the development of the Sport and Exercise Nutrition register (SENr) and served as a Board member and Assessor for the register.

Her experience within elite sport includes working with the English Hockey Association, the Lawn Tennis Association, Crystal Palace, and Wimbledon F.C., London Broncos RLFC, UK Athletics and as a tutor for the American College of Sports Medicine. She went on to work for the Welsh Rugby Union National Team and provide nutritional support to Elite Cymru athletes including Welsh swimmers preparing for the Commonwealth Games. Karen also worked as the lead performance nutritionist to the English Institute of Sport (EIS) London Region providing nutritional support to women's rugby, athletics, and canoeing.

After leaving the EIS she led the development and delivery of the nutrition component of the Advanced Apprenticeship in Sporting Excellence (AASE) for Athletics in London and mentored a team of 7 graduate and practitioner Sport and Exercise Nutritionists (SENr) providing nutritional support to athletes on the programme.

Karen was awarded her Doctorate in July 2010 entitled: "The promotion of optimal hydration in athletes and sportspeople" at Roehampton University.


Teaching

I teach on a range of nutrition modules delivered across the school to both Nutrition and Health and Sport and Exercise Science students including the Level 5 Macro and Micronutrients (SSP5131M, HEN5003), Population and Lifecycle Nutrition (DAN5201) and the Applied Nutrition project for Experiential Learning (STF6028). I am the module leader for the Level 6 Nutrition in Sport and Exercise (FAN6209M) module. Additionally, I supervise both under and postgraduate dissertation projects with a focus on sports nutrition and the role of protein in older adults and ageing. I am also a personal tutor for the Food Science and Nutrition programme.

Awards

  • Karen received the Dairy Council Professional Award, April 2015 for her case study describing a dietary strategy to increase muscle mass and improve recovery in an elite sprint kayaker.

My research interests primarily have a focus on applied sports nutrition interventions and the role of protein in healthy ageing.
