My role at the ZERO2FIVE Food Industry Centre

My role involves supporting food and drink manufacturers in Wales through NPD knowledge transfer across all product categories, with a particular focus on:

  • Supporting and mentoring clients in the development and implementation of best practice NPD process
  • Facilitating new and existing product development in all stages from concept through to launch
  • Assisting recipe formulation for safe product development and guidance with regards to shelf life determination
  • Sensory panelling of products to guide development and to maintain a competitive edge for our clients
  • Facilitating and leading product innovation and development for ZERO2FIVE and its clients

Previous Experience

Dunbia: NPD Technologist (August 2017- April 2021)

Dunbia is a premium meat processor. The Cross Hands site where I was based, is a retail packing site which produces for the UK Retailers and Food Service. I co-ordinated the product development process from brief through to launch (Gate Process) in compliance with Food Safety legislation for Sainsburys and Tesco. While supporting with other retail and food service accounts when needed: Asda, Morrisons, Lidl, Iceland, Amazon, JD Wetherspoon, Whitbread and Stonegate. Products include: Fresh Meat (Steaks, Joints, Offal), Comminuted (Minces, Burgers, Meatballs), Value Added, Sous Vide, Party Food and Christmas Showstoppers.

Mileeven Fine Foods: Production, Quality, NPD & Marketing role. (January-August 2017)

Mileeven Fine Foods is a family run business specialising in 100% Pure Irish Honey and single source raw honeys from around the world, preserves and Christmas products. 

Knockdrinna Farmhouse Cheese

Role varied between the Cheese Production Unit, Farm Shop and Café. (March 2012-September 2014). Family Run Cheese Producer- Goats, Sheep and Cows Cheese in addition to a Farmshop & Café.

Fresh Finesse: Food Store & Shopping Centre Demonstrator. (January 2015- August 2016)

I conducted fresh food demonstrations.

Qualifications and Professional Memberships

BSc (Hons) Food Marketing & Entrepreneurship

I studied “Food Marketing & Entrepreneurship”, a 4 year Bachelor Honours degree at University College Cork. This course offered a unique combination of business and science. The programme explores the application of business concepts and food science to support business excellence. Similar to Cardiff Metropolitan University, UCC has an international reputation in food education and research and taught by lecturers who are internationally recognised in their field of expertise.

  • AHDB: Meat quality getting to grips with the complexities of the beef and lamb supply chain.
  • CIEH Food Safety Level 3 in Manufacturing
  • HACCP and Food Safety Level 2
  • Highfield Level 3 Award in HACCP for Food Manufacturing (RQF)
